Ginger fried rice

  1. If making rice from scratch: Rinse 1 cup (185 g) white rice several times until the water runs clear.
  2. In a medium pot, bring 2 cup (240 ml) water with a pinch of sea salt to a rapid boil over high heat.
  3. Add the rinsed rice, reduce heat, cover, and cook until fluffy and the water is absorbed (a rice cooker simplifies this step).
  4. Heat the sesame oil in a frying pan over medium-low heat.
  5. Add the bacon (if using), garlic, and ginger; cook until tender and fragrant.
  6. Add the cooked rice, spreading it evenly into a thick layer; cook uncovered over medium heat for 10 minutes, stirring occasionally.
  7. Pour the beaten eggs into the rice; stir frequently until the eggs are cooked, about 5 minutes.
  8. Add the green onions and cook uncovered for 2 more minutes, until the rice is golden and the eggs and onions are fully cooked.
  9. Season with salt and freshly ground pepper to taste. Serve warm.
  10. Tip: Add more oil while frying if the rice starts to dry out or stick, to keep it fluffy.
  11. Tip: Feel free to add vegetables like carrots, onions, peas, corn, broccoli, or mushrooms.
